The rigid fermentation tank for the production of wine, cider, pear and fruit wines, comprises a withdrawal plug and a geometry allows to obtain an upper level of wort with a section/volume ratio of 0.8-5 m-1. The tank is closed by a flexible film (4), which has the plug allowing to control a gas phase of the upper level of the wort during the phases of pre/post fermentation and fermentation maceration. The fermentation tank (3) has a constant section, in which a volume is not depend upon the height of the liquid. The tank is closed by a flexible film (4), which has the plug allowing to control a gas phase of the upper level of the wort during the phases of pre/post fermentation and fermentation maceration. The fermentation tank (3) has a constant section, in which a volume is not depend upon the height of the liquid. The section and the volume are differed according to the height of the liquid. The flexible film is replaced by a flexible sheath to form a shape after partial refilling of the wort and comprises various openings to control the introduction of the wort, liquid/or gas or the maintenance of the gas phase. Crushing is carried out by exerting a pressure on walls of the sheath to insert a cap by maintaining the plug opening. A thermal regulation system controls the temperature of wort inside of the tank, pocket or sheath. An independent claim is included for a pocket, a sheath or enclosure.
