The processing of wort in a fermentation tank of a wine storehouse, comprises introducing vintage into a lower enclosure of the tank, reassembling and diffusing part of an accumulated juice by introducing external gas into the lower enclosure, and initiating the fermentation through a generated pressure by emission of gas from the fermentation into the lower enclosure using reassembling (24) and diffusing unit, where the fermentation is initiated next to the reassembling and diffusing step of the accumulated juice, and the accumulated juice is diffused by gravity using the reassembling unit. The processing of wort in a fermentation tank of wine storehouse, comprises introducing vintage into a lower enclosure of the tank, reassembling and diffusing part of an accumulated juice by introducing external gas into the lower enclosure, and initiating the fermentation through a generated pressure by emission of gas from the fermentation into the lower enclosure using reassembling (24) and diffusing unit. The fermentation is initiated next to the reassembling and diffusing step of the accumulated juice. The accumulated juice is diffused by gravity using the reassembling unit. The tank is equipped with the reassembling unit under a pressure of a part of the juice of the lower enclosure (14) towards the higher enclosure (16), and the diffusing unit of the juice of the higher enclosure towards the lower enclosure. Temperature of the vintage is controlled during the collection of the introduced external gas. The introduced external gas is obtained from the vintage fermentation. Micro-oxygenation takes place in the lower enclosure during the fermentation phase of the vintage, which is subjected to reassembling step by the introduced gas from the fermentation. An independent claim is included for a device.
