PPROBLEM TO BE SOLVED: To provide a novel raw starch-degrading enzyme produced by Eisenia fetida. PSOLUTION: A uniform raw starch-degrading enzyme I and a raw starch-degrading enzyme II produced by Eisenia fetida are obtained by suspending the lyophilized powder of the Eisenia fetida in a buffer solution, centrifuging the suspension, recovering the supernatant, adding a protease inhibitor to the supernatant, ultra-centrifuging the supernatant, adding ammonium sulfate to the obtained supernatant to give 35% saturation, dissolving the obtained precipitates in a small amount of a buffer solution, subjecting the obtained solution to an anion exchange chromatography using amylolytic activity for starch or raw starch as an index to obtain two fractions having amylolytic activity for raw starch (the first eluted active fraction is named raw starch-degrading enzyme I, and the second eluted active fraction is named raw starch-degrading enzyme II), subjecting these fractions to a gel filtration chromatography and then a hydrophobic chromatography, and then collecting the active fractions.
