PPROBLEM TO BE SOLVED: To provide a protein which is a protein of a rice origin or rice material brewed food origin and excellent in the lipid metabolism ameliorating effectiveness. PSOLUTION: The protein is a protein of a rice origin or a rice material brewed food origin and is characterized by having the following physicochemical properties from (a) to (c) in the followings. (a) The protein has insolubility or poor solubility to water, an organic solvent, a salt aqueous solution, and an alkali solution. (b) The protein has poor hydrolyzability to cellulase, hemicellulase, mannanase, and protease, and is indigestible to pepsin and pancreatin.
