PROBLEM TO BE SOLVED: To obtain flour for fried instant noodles simply eaten in a short time, having a low oil absorption, excellent palatability and flavor and to provide a method for producing fried instant noodles using the same by using the flour for fried instant noodles.;SOLUTION: This flour for fried instant noodles comprises 0.5-5 pts.wt. of sodium lactate and 0.5-8 pts.wt. of an oligosaccharide based on 100 pts.wt. of grain flour.
