PROBLEM TO BE SOLVED: To provide a method for producing a canned oolong tea having an improved economical cost while maintaining the taste of the oolong tea by a sterilizing method instead of a retort sterilization by a high-temperature and high-pressure sterilizing vessel. ;SOLUTION: This method for producing a oolong tea canned in a real can comprises carrying out previous sterilization of a oolong tea extract by an ultrahigh-temperature instantaneous sterilizer at 130-137°C for 60-100 sec so as to satisfy the formula F0≥10 (F0 is a fatal value), cooling the previously sterilized extract to about 95°C, enclosing the cooled extract while keeping the temperature, reversing the can filled with the extract, keeping the temperature thereof at ≥90°C for about 20 sec and further keeping the temperature of the can at ≥85°C for 4-5 min.;COPYRIGHT: (C)1999,JPO
