PROBLEM TO BE SOLVED: To obtain a xanthan gum having high viscosity, hardly forming an undissolved lump of flour and to provide a method for producing the xanthan gum. ;SOLUTION: This high-viscosity xanthan gum shows 4,000-25,000 Pa.s viscosity (a Brookfield viscometer at 6 ppm at 25°C) in the case of 0.5 wt.% aqueous solution as a xanthan gum concentration. The method for producing the xanthan gum comprises heating a xanthan gum having ≤50% loss on drying (heating under normal pressure at 105°C for 5 hours) at 100-140°C for ≥30 minutes.;COPYRIGHT: (C)1999,JPO
