The catch mechanism for locking the blade into position includes a curved slot cut into the blade, its center of curvature coinciding with the blade pivot axis, each end of the slot ending with a relatively large round area. A pin having two different diameter regions extends through the slot, the smaller first diameter being equal to the width of the groove and the larger second diameter being equal to the diameter of the slot end regions. The pin is spring-biased in its axial direction so that its first diameter region is located in the center of the groove in the spring-loaded state and the second diameter region is located in one of the slot end regions in the non-spring-loaded state. When the blade is rotated so that the pin is moved into one of the slot end regions, both the main part of the blade and the part used to cut open the stomach of an animal are in a position ready for use. The main part of the blade and the part used to cut open the stomach are provided in a single blade and located on either side of a hinge in a knife shaft. The main part is used for normal cutting work.
