Separation process of a glyoxal diacetal of formula (I) (see formula) wherein R is a (C1-C4) linear or branched group from an aqueous crude mixture comprising said glyoxal diacetal and as a glyoxal monoacetal of formula (II) (see formula) wherein R is as defined above, wherein said method has at least one stage liquid-liquid countercurrent extraction of said glyoxal diacetal using a solvent immiscible in the reaction medium, in order to obtain, on the one hand, a light phase comprising said glyoxal diacetal and, on the other hand, a heavy phase comprising the remaining components of the crude mixture.
