Superoxide dismutases are used to cleave and/or remove Amadori and/or Maillard products. Independent claims are also included for: (1) detergent, cosmetic or pharmaceutical products containing superoxide dismutases; (2) polynucleotide with SEQ ID NO:1 (not given in the specification) encoding a polypeptide with SEQ ID NO:2 (not given in the specification); (3) vectors and host cells containing the polynucleotide; (4) superoxide dismutase polypeptide with SEQ ID NO:2; (5) identifying superoxide dismutases that decompose Amadori and/or Maillard products by contacting a protein-containing sample with Amadori and/or Maillard products and a reagent for detecting hydrogen peroxide, and detecting any hydrogen peroxide formed.
