The method involves introducing a dry air flow (7) on a surface of a fluid material (3) for drying the material, and measuring temperature at the surface of the material by an infrared thermometer in a continuous, impulse and contactless manner. A flow rate amount and/or temperature of the dry air flow are controlled depending on the measured temperature at the surface of the material. The material is transported to a conveyor belt in a continuous or gradual manner. Speed of the conveyor belt is adjusted depending on the measured temperature. An independent claim is also included for a device for drying a fluid material.
