The process for cooking a fish implemented in a cooking enclosure (2), comprises a first step of heating the fish for 2-10 minutes until a temperature record of 95[deg]C in the cooking enclosure, a second step of cooking an area of mass of the predetermined food until a temperature record of 95-100[deg]C in the cooking enclosure, and two cycles of pre-programmed cooking for two different area of mass of the food. The interior temperature of the food is 60-75[deg]C at the end of step of cooking. The first and second cycle of cooking take place for an area of mass of 200-1000 g and 1001-2800 g. The process for cooking a fish implemented in a cooking enclosure (2), comprises a first step of heating the fish for 2-10 minutes until a temperature record of 95[deg]C in the cooking enclosure, a second step of cooking an area of mass of the predetermined food until a temperature record of 95-100[deg]C in the cooking enclosure, and two cycles of pre-programmed cooking for two different area of mass of the food. The interior temperature of the food is 60-75[deg]C at the end of step of cooking. The first and second cycle of cooking take place for an area of mass of 200-1000 g and 1001-2800 g, in duration of 80 and 130 minutes respectively.
