The invention relates to a process for the permanent deformation of keratinous fibers, in particular the hair, comprising: a step of application to the keratinous fibers of a reducing composition, for reducing the disulfide bonds of keratin, the keratin fibers being placed under mechanical tension before, during or after said application, preferably before, then- a step of applying to the keratinous fibers of an intermediate rinsing composition comprising at least one salt of monovalent metal cation and / or at least one salt of ammonium, and at least one organic acid, wherein said monovalent salt or salts are not one or more salts of said organic acid or acids present in the intermediate rinsing composition, and said salt or salts not being one or more surfactants, and then an oxidation fixing step, for reforming said bonds, by application to the keratin fibers of an oxidizing composition, said process not including a water rinsing step between the step of applying the reducing composition and the step of applying the intermediate rinsing composition, or between the step of applying the rinsing composition intermediate and the step of applying the oxidizing composition.
