The rapid cooling cell device (1) for food products, comprises a housing (2), a compressor unit (4), an evaporator, four cooling chambers, an air temperature sensor (10), a regulation system (5) receiving temperature information from the sensor, and an end of cooling cycle indicator for each chamber and a probe (11) to be inserted in the food products, linked to a regulation system and providing a temperature information. The regulation system is adapted to regulate the temperature of the chambers depending on the presence or not of products to be cooled. The rapid cooling cell device (1) for food products, comprises a housing (2), a compressor unit (4), an evaporator, four cooling chambers, an air temperature sensor (10), a regulation system (5) receiving temperature information from the sensor, and an end of cooling cycle indicator for each chamber and a probe (11) to be inserted in the food products, linked to a regulation system and providing a temperature information. The regulation system is adapted to regulate the temperature of the chambers depending on the presence or not of products to be cooled. The regulation system is configured to compare the temperature provided by the applied probes with the air temperature in the chambers in order to determine the end of a cooling cycle, the presence or absence of food products and the wrong positioning of the probes. A generator to humidify the cooling air. The evaporator is actuated by a compressor and is disposed in a circuit of air, which is linked to the cooling chambers depending on the presence or absence of products to be cooled. The regulation system is configured for controlling a refrigerant flow in the evaporator. The circuit of air is linked to each chamber by a valve comprising an opening position assuring the cooling of the chamber and a closed position sealing the communication between the air circuit and the chamber, and by a ventilator controlled by the regulation system. The valve is mechanically controlled by a support tray and by the regulation system. The regulation system comprises a cooling chamber, and a module for comparison between the temperature detected by an air temperature sensor and the temperature detected by a probe in the cooling chamber.
