PROBLEM TO BE SOLVED: To provide a muscular protein denaturation inhibitor which is sufficiently effective only in a small amount added, because of exerting excellent effects due to inhibiting heat denaturation and freeze denaturation of fish meat-origin muscular proteins, which shows almost no taste as a solution, is conventionally approved as a food additive, is aloso often employed as a supplement component due to its being health-promoting functions, and is safe to human bodies.;SOLUTION: The muscular protein denaturation inhibitor contains a citric acid salt as an active ingredient and inhibits heat denaturation and/or freeze denaturation of the fish meat-origin muscular protein.;COPYRIGHT: (C)2009,JPO&INPIT
