PROBLEM TO BE SOLVED: To provide a quality improver for a Tako pancake (a Japanese pancake containing bits of octopus) or an Okonomi pancake (a Japanese pancake containing vegetables and other ingredients), capable of giving the Tako pancake or the Okonomi pancake such food feelings as to be crisp on the surface, not destroyed in its shape, full and agreeable to the palate, juicy and soft in its inside, and light, without deteriorating the taste of the Tako pancake or the Okonomi pancake, and further capable of maintaining the same food feelings as those of the Tako pancake or the Okonomi pancake which is eaten immediately after cooked, even when it is eaten after subjected to cold storage or freezing and then reheated with a range, although the conventional Tako pancakes or Okonomi pancakes have such poor food feelings as to be clammy on the surface, destroyed in their shapes, deteriorated in their juicy and soft feelings, and made to become heavy, viscous, sticky and tacky, when they are eaten after subjected to cold storage or freezing and then reheated with the range.;SOLUTION: This quality improver for the Tako pancake or the Okonomi pancake contains pulverized egg powder.;COPYRIGHT: (C)2002,JPO
