PROBLEM TO BE SOLVED: To provide a flaking device for boiled fish or steamed fish ensuring that boiled fish meat is flaked into proper sized pieces while exposing out muscle membrane surfaces of meat portions of the boiled fish so as to produce dried fish through boiling raw material fish followed by flaking the fish, and roasting and drying the fish.;SOLUTION: The flaking device for boiled fish or steamed fish is provided with the following: a rotary roll horizontally arranged, on which several rows of pins are attached in parallel; and fixing pins opposed to the attached pins, and each attached at a position having an angle of 10-30° or preferably 15-25° downward based on a horizontal level.;COPYRIGHT: (C)2005,JPO&NCIPI
