PROBLEM TO BE SOLVED: To provide a heat sterilizer capable of preventing unevenness of heating so as to inhibit quality deterioration of sterilized materials caused by excessive heating and insufficient sterilization thereof caused by unsatisfactory heating, when the sterilized materials are subjected to heat sterilization by being sprayed with hot water in a sterilizing vessel.;SOLUTION: This heat sterilizer has a sterilizing vessel 7 which receives trays 4 therein in such a state that the trays on which the sterilized materials 3 are laid are stacked to form multiple layers, so as to subject the sterilized materials in the sterilizing vessel to the heat sterilization by spraying the hot water into the sterilizing vessel, and further the heat sterilizer has multiple stages of hot water-spraying nozzles 1 which are installed in the sterilizing vessel in such a manner that heights of the stages of the nozzles are different from each other, so as to subject the sterilized materials 3 to the heat sterilization by spraying the hot water from the hot water- spraying nozzles 1, wherein amounts of sprayed hot water from the hot water-spraying nozzles 1 positioned on lower stages among the hot water-praying nozzles 1 installed in the multiple stages are set to be smaller than those of the sprayed hot water from the hot water-praying nozzles 1 positioned on upper stages.;COPYRIGHT: (C)2004,JPO
