Using dispersible dry water in powder form comprising a copolymer of vinyl acetate-ethylene film formation or a copolymer of vinyl acetate-ethylene in which part of the monomer units derived from ethylene are substituted by units derived alkyl acrylates or mixtures of acrylates and versatates alkyl for the preparation of aqueous dispersions for the conservation treatment of the surface of food products on the surface of which the copolymers form a compatible protective film which is insoluble in water and foodstuffs.
