Chitinosanase

Chitosanase (I) derived from Alternaria alternatacleaves chitosan specifically at N-acetylglucosamine-glucosamine linkages, has a molecular weight of about 18 kD, has an optimum pH of 4 and has an optimum temperature of 70[deg] C : Independent claims are also included for: (1) DNA sequence coding for (I); (2) vector and host cell (II) containing the DNA sequence; (3) producing (I) by culturing (II); (4) degrading chitosan by reaction with (I) or (II); (5) chitosan degradation products produced as above.
