A Saccharomyces cerevisiae which alcohol productivity is high is provided to have ethanol fermentation effect in producing ethanol by the serial process. A Saccharomyces cerevisiae strain (KCTC 11250BP) has 10-45°C of temperature for living and 30-40°C of optimum temperature for ethanol fermentation. A Saccharomyces cerevisiae strain (KCTC 11249BP) is produced by protoplast fusion between Saccharomyces cerevisiae strain (KCTC 11250BP) and Saccharomyces bayanus strain (KCCM 12633). The Saccharomyces cerevisiae strain (KCTC 11249BP) has fungi aggregation and ethanol fermentation function. The Saccharomyces cerevisiae strain (KCTC 11249BP) has 15-39°C of living temperature, 32-36°C of optimum temperature for fermenting ethanol, and 4-5 of optimum pH for fungi aggregation. A method for manufacturing ethanol comprises a step of producing ethanol from a substrate using the Saccharomyces cerevisiae. The substrate comprises one more selected among starch, polysaccharide, disaccharide and glucose.
