A modified plant-based polyol is made by reacting a plant oil having a carbon-carbon double bond, and a reactant having a nucleophilic functional group and/or active hydrogen functional group in the presence of an addition reaction catalyst. Independent claims are included for: (1) a process of preparing a polyurethane comprising reacting a plant oil having a carbon-carbon double bond with a reactant having a nucleophilic functional group and active hydrogen functional group in the presence of an addition reaction catalyst to form a plant polyol; and reacting the plant polyol with an isocyanate; and (2) a reaction product of plant oil having a carbon-carbon double bond with a reactant having a nucleophilic functional group and active hydrogen functional group.
