Enzyme-catalyzed synthesis of triglycerides with repeated unsaturated fatty acids (1) before hydrolysis, comprises hydrolyzing 1-4C alkyl ester of (1) under vacuum and under continuous supply of water, removing the water, synthesizing (1) with glycerine under vacuum to their triglycerides in the presence of an enzyme, separating the enzymes of the triglycerides and removing the remaining fatty acids by distilling from the triglycerides. Enzyme-catalyzed synthesis of triglycerides with repeated unsaturated fatty acids before hydrolysis, comprises (a) completely or partially hydrolyzing 1-4C alkyl ester of repeated unsaturated fatty acids under vacuum and under continuous supply of water or partially hydrolyzing in several stages without vacuum; (b) removing the water by separation or distillation; (c) synthesizing the repeated unsaturated fatty acids with glycerine under vacuum to their triglycerides in the presence of an enzyme under anhydrous conditions; (d) separating the enzymes of the triglycerides by separation or filtration, and (e) removing the remaining fatty acids and/or 1-4C alkyl esters by distilling or refining from the triglycerides.
