The device has an optical system with an optical double barrier constituted by two pair of emitter or receiver (3-1, 3-2, 4-1, 4-2). The pair of emitter or receiver (3-1, 3-2) emits a light beam or centre median beam on a measure cylinder (1) to detect a lower part of a meniscus, while the pair of emitter or receiver (4-1, 4-2) emits light beam passing between centre and wall of the cylinder to detect an upper part of the meniscus. A fixed optical barrier is constituted by a pair of emitter or receiver counting the drops of condensate falling into the cylinder, in course of distillation. An independent claim is also included for a method for implementing the monitoring device.
