The knife (1) has a blade (2) pivotingly mounted around a pivot (20) with respect to a handle (3) for passing from a closed position in which the blade is housed in the handle, to an open position in which the blade is positioned in an extension of the handle. The blade is maintained in the closed position or the open position by a flexible spring plate (24) whose base is integrated to a lug of the blade. Free ends (22, 23) of the spring plate are supported against a bar stop (30) to maintain the blade in the open position or closed position.
