A beverage system 2 employs a heat exchanger 7 for cooling a beverage such as beer prior to dispense. The beverage passes through heat exchanger 7, and is cooled by coolant from a cooler 8, which may be an ice bank cooler. The coolant is a mixture of water and an additive, for example glycol, for depressing the freezing point of the water. The ratio of the water and additive is controlled to maintain a desired mixture according to the temperature of the coolant.
