PROBLEM TO BE SOLVED: To provide an inkjet coloring composition enabling direct high definition beautiful printing on a food for attaining high resolution printing and an edible inkjet ink with good productivity and storage stability.;SOLUTION: The edible inkjet ink includes a resin, an aqueous solvent, and a monascus red pigment. The color value of the monascus red pigment is ≥200 to ≤2,000. The value obtained by multiplying the color value of the monascus red pigment and the monascus red pigment content (wt.%) in the ink and dividing the same by 100 is ≥7.0 to ≤33.0.;COPYRIGHT: (C)2011,JPO&INPIT
