PPROBLEM TO BE SOLVED: To provide a freezing and thawing system and freezing and thawing method having high energy efficiency and cost efficiency by effectively utilizing especially low temperature cold heat sources generated at the time of thawing a frozen object to be treated of which temperature is low. PSOLUTION: The freezing and thawing system has a freezing thawing bath 2, an ammonia absorption refrigerating machine 3 for freezing and thawing the object to be treated supplied to the freezing thawing bath 2, a cooling tower 1 for cooling the ammonia absorption refrigerating machine 3 and a hot brine circuit B2 for allowing the cold heat sources generated at the time of thawing the frozen object to be treated to be utilized for refrigerating an absorber 6 comprising the ammonia absorption refrigerating machine 3. A heat exchanger 15 for allowing a part of the cold heat sources generated at the time of thawing the object to be treated to be took out and used is provided in the hot brine circuit B2.
