The present invention describes a design, construction and characterization of biosensors sensitive to glucose and fructose to be detected in syrups, which are based on dispersed biocomposites of graphite-epoxy-mediator-enzyme, in such a manner that the construction of the glucose biosensor includes the use of the oxidase enzyme, and the fructose biosensor the use of dehydrogenase fructose, where the biosensor characterization is performed by determining in each case the action potential, the response time, the pH effect and the effect of the temperature in the biosensor response, the activation energy, the calibration curve, apparent Michaelis-Menten (Kmap)constant value and the maximum response intensity (Imax), the working range where the biosensor response is directly proportional to the substrate concentration, the sensibility, the detection limits (upper and lower), the signal reproducibility between biosensors of the same lot and between biosensors of different manufacturing lots, and finally the stability of the signal with regard to the time. The present invention also proposes the validation and application of the biosensors, using as validation parameters of the response thereof the relative recovery and error percentage obtained upon adding an established amount of glucose or fructose in syrups. The dispersion degree is also determined by the variation coefficient of the obtained analytic results, the content of glucose and fructose in syrups of interest being also determined.
