Procedure for treating oil mill wastewater (OMW) and especially for the preparation of tyrosol and / or hydroxytyrosol, consisting of: a) coarse filtration (RF), microfiltration (MF), ultrafiltration (UF), nanofiltration (NF) and reverse osmosis (OI) of OMW; b) chromatographic separation of tyrosol, hydroxytyrosol and other phenolic compounds from the concentrated OI; c) oxidation of the tyrosol thus obtained to give hydroxytyrosol in the presence of methylrenium trioxide and hydrogen peroxide in a protic solvent; d) concentration and spraying of the high molecular weight portion with the recovery of water and compounds with a high added value.
