This invention describes products fermented with lactic and probiotic bacteria from milk or almond milkshake (Prunus amygdalus var dulcis), from other non-legumes or horchata nuts, obtained from tigernut tubers (Cyperus sculentus). They present the nutritional benefits of nuts and horchata and of added probiotic bacteria, with their own flavor and consistency, acidity and a certain aroma similar to yogurt. Optionally, if the concentration of sugars is kept low, they will possess astringent and restocking properties of the intestinal flora. They can also be combined with additives and flavors and enriched with minerals, vitamins, fiber or oligosaccharides with bifidogenic effect, etc., or pasteurized after fermentation.
