Protein having a GFAT activity comprising: a GFAT sequence and at least a sequence of a purification tag, being the sequence of the purification tag inserted between two consecutive amino acids of the GFAT sequence, said amino acids included being: - a sequence of GFAT corresponding to the sequence extending between amino acids 30 to 80 of GFAT from Escherichia coli, or - a GFAT sequence corresponding to the sequence extending between amino acids 220 to 230 of GFAT Escherichia coli.
