In a beer brewing process the ingredients are introduced to a wort kettle (01) with a by-pass aperture (21) below the wort (03) liquid surface (04). A fraction of the wort (03) drains from the kettle (10) interior through the by-pass aperture (21) direct into the surrounding wort volume outside the kettle (10). Also claimed is a commensurate wort kettle. An independent claim is also included for a wort kettle.
