It is intended to provide a method of quickly sprouting fresh coffee beans whereby the sprouting period until the sprouting of fresh coffee beans can be shortened as far as possible, a coffee drink and a sprouting system for fresh coffee beans. The above object can be established by dipping fresh coffee beans in alkaline hot water, maintaining the alkaline hot water at such a temperature as allowing the sprouting of the fresh coffee beans to thereby give fresh coffee beans having absorbed the alkaline hot water, separating the fresh coffee beans having absorbed the water from the alkaline hot water and standing the fresh coffee beans having absorbed the water in a moist atmosphere that is maintained at such a temperature as allowing the sprouting of the fresh coffee beans having absorbed the water to thereby make the beans to sprout.;COPYRIGHT KIPO & WIPO 2010
