FIELD: food industry.;SUBSTANCE: fat-and-oil phospholipid product is produced by means of hydration of unrefined corn oil with aqueous solution of reagent making phospholipid emulsion followed by its drying to produce phospholipids. After drying, phospholipids are extracted with ethanol preliminary treated in a rotating electromagnetic field with magnetic induction of 0.5-0.8 Tl with the ratio of phospholipids-ethanol (1:8)÷(1:10) and temperature of 25-30°C making alcohol soluble and alcohol insoluble fractions of phospholipids. Alcohol soluble phospholipid fraction is separated from alcohol insoluble phospholipid fraction and ethanol is removed form the alcohol soluble fraction under vacuum to produce target product.;EFFECT: product with high membrane protection properties.;1 tbl, 3 ex
