FIELD: food industry.;SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method involves cloves extraction with liquid nitrogen with separation of the corresponding miscella, preparation and cutting of yacon, its drying in microwave field till residual humidity about 20% at the microwave field power providing warming of yacon bits to 80-90°C for at least an hour and frying it, drying of orange refuse in microwave field till residual humidity about 20% at the microwave field power providing warming of orange refuse mass to 80-90°C for at least an hour and further drying it till residual humidity about 5% by conventional method, mixing yacon and tangerine refuse in mass ratio 7:3, impregnation of obtained mixture by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.;EFFECT: invention enables to produce new flavoured coffee drink out of unconventional raw material according to nonwaste technology.
