FIELD: agriculture.;SUBSTANCE: invention relates to the field of meat and poultry-processing industry and can be used for ration enrichment of different food products with animal proteins. The method implies crushing raw material, production of suspension, protein hydrolysate with proteolithic units, pasteurisation and and destroying of microbially-derived enzymes, cleaning of liquid protein fraction and drying. The suspension is prepared through mixing of raw material with water in the ratio of 1.0:1.5-1.0:2.5. Hydrolysis is held with multi-enzyme composition of microbially-derived proteolytic enzymes in concentration 0.15-0.25% comparing to raw material mass under temperature of 53-57°C during 1.5-2.5 hours. Composition consists of proteolytic enzymes which are produced by B.licheniformis. Concentrate is hold in vacuum till dry substances content 20-40%. The protein additives are produced in liquid, concentrated and powder form.;EFFECT: invention allows producing of protein additive, which contains more than 80% of protein, with improving of organoleptic and functional properties.;3 tbl
