The cooking appliance comprises a cooking area (10), an inlet/outlet opening (16, 18, 20) for supplying and/or discharging air or water steam in/from the atmosphere of the cooking area, a detector unit (40, 42, 44) for detecting the gaseous medium guided through the inlet/outlet opening for detecting a corresponding detector signals, a gas sensor unit (22) for the detection of gases in the cooking area and fro detecting a corresponding sensor signals, and a procession unit for processing sensor signals and the detection signals and for determining a gas concentration of the gases. The cooking appliance comprises a cooking area (10), an inlet/outlet opening (16, 18, 20) for supplying and/or discharging air or water steam in/from the atmosphere of the cooking area, a detector unit (40, 42, 44) for detecting the gaseous medium guided through the inlet/outlet opening for detecting a corresponding detector signals, a gas sensor unit (22) for the detection of gases in the cooking area and fro detecting a corresponding sensor signals, a procession unit for processing sensor signals and the detection signals and for determining a gas concentration of the gases, and a control or regulating unit for controlling cooking process in dependent upon the determined gas concentration. The detector unit comprises a volume flow sensor and is arranged to detect the quantity of the gaseous medium. The detector unit is arranged to detect the moisture content of the gaseous medium and the procession unit is arranged to divert a change of the gas concentration, moisture content and temperature change in the atmosphere from the detector signal into the cooking area that is induced through the gaseous medium guided through the inlet/outlet medium. The procession unit is arranged to detect the gas concentration of the gases under consideration of the change of the moisture content and temperature. The detector unit is arranged to detect the temperature of the gaseous medium. The procession unit is arranged to divert measuring stream of the gaseous medium from the detector signal. The gas sensor unit comprises a gas sensor that is arranged in the cooking area or connected over a gas line with the cooking area. The inlet/outlet opening is a part of an aeration system of the cooking appliance and is arranged on an outlet of the cooking appliance. An independent claim is included for a method for controlling cooking process of cooking product in a cooking area of the cooking appliance.
