Use of 4,4'-dihydroxydeoxybenzoin compound (I) or its salt or mixture of the salts for masking or reducing unpleasant taste of an unpleasant tasting material, and/or strengthening the sweet tasting material of sweet material, is claimed. Use of 4,4'-dihydroxydeoxybenzoin compound of formula (I) or its salts or mixture for masking or reducing unpleasant taste of an unpleasant tasting material, and/or strengthening the sweet tasting material of sweet material, is claimed.
