Treating wort in brewing process during lautering, comprises filling mash having wort and solid particle in separation container under forming filter cake, and purging wort passing through filter cake, and flowing liquid into the container
The method comprises filling a mash (6) having wort (15) and solid particles in a separation container (2) under forming a filter cake (11), and purging the wort passing through the filter cake, and flowing the liquid into the separation container by a gas bubble stream. A part of the gas bubble stream flows from a filtrate chamber into an ultra-filtrate chamber through the filter cake. The gas bubble stream is introduced through pores having frits. The pressure, the temperature and/or the flow rate of the flowing gases are controlled for forming the gas bubble stream. The method comprises filling a mash (6) having wort (15) and solid particles in a separation container (2) under forming a filter cake (11), and purging the wort passing through the filter cake, and flowing the liquid into the separation container by a gas bubble stream. A part of the gas bubble stream flows from a filtrate chamber into an ultra-filtrate chamber through the filter cake. The gas bubble stream is introduced through pores having frits. The pressure, the temperature and/or the flow rate of the flowing gases are controlled for forming the gas bubble stream, and are varied during the lautering process. The gas is guided through water before introducing into the separation container, and is nitrogen, carbon dioxide or inert gas. The gas bubble stream is introduced, so that the finest particle adsorbs from the liquid on the surface of the gas bubbles, rises with the liquid on the surface of the gas bubbles and separates itself on the mash surface, so that the undesirable aroma material of the wort enriches by the desorption in the rising gas bubbles and reduces in the wort and so that the filtration path is flowed through in the filter cake and a closing of the filtration path is prevented by rough particles. An independent claim is included for a device for lautering in the brewing process for treating wort.
