The method involves acquiring an image of a muscle, and modeling the muscle from the image. A cutting plane of the muscle is optimized from the model, and the muscle to be cut is positioned. A pressure in the muscle is exerted on a support with a cutting device. An image sensor is provided for laser rays reflected on the muscle and placed outside a laser plane. Elementary volumes occupied by the muscle or volumes in parallelepiped rectangle corresponding to a bar of material of the muscle are determined. An independent claim is also included for a device for cutting a muscle.
