The method involves discharging marine molluscs in a bath of brine at a low temperature to anesthetize the molluscs and to kill the molluscs while deep-freezing the molluscs. The molluscs are transferred in a turbulent water bath in which the molluscs are subjected to repeated movements and repeated impacts provoking rupture of attachment zones of fleshes of the molluscs with shells of the molluscs. The fleshes of the molluscs are separated from the shells, and the fleshes of the molluscs are recovered.
