PPROBLEM TO BE SOLVED: To provide a method for producing or proliferating an immuno-stimulating component and antioxidative component from unused organic materials discharged from foodstuff-related industries or agriculture such as old rice, soybean curd refuse as a food residual material, white liquor lees, soy sauce lee, etc., in a high efficiency and inexpensively, and a method for recycling, capable of obtaining highly functional materials containing the immuno-stimulating component and antioxidative component as the recycled materials having a high safety and security from the unused organic materials inexpensively. PSOLUTION: This method for extracting the highly functional components efficiently, without losing the activity of the functional components, is provided by culturing/fermenting the unused organic materials discharged from the foodstuff-related industries or agriculture as a medium by using fungi belonging to the genus Cordyceps, preferably Cordyceps sinensis to produce or proliferate the immuno-stimulating component or antioxidative component and extracting at 40 to 50C energy-saving extracting temperature.
