PROCESS FOR THE PRODUCTION OF FERMENTED MILK AND DRINK / FOOD MADE FROM FERMENTED MILK. The present invention relates to a method for the production of fermented milk that conveniently provides an excellent taste and aroma or features, such as an antihypertensive effect, for foods and beverages. The method enables efficient production and certain peptides having useful functions, such as an antihypertensive effect, in the resulting fermented milk. The invention also provides food and drinks from fermented milk using fermented milk which has an excellent taste and aroma as well as functionality. The present method includes the steps of (A) enzymatic digestion of animal milk casein with protease (1) containing a certain protease such as papain, and (B) fermentation, of animal milk casein and / or similar with lactic acid bacteria to produce VPP, IPP and YP in the resulting fermented milk. Food or beverages produced with fermented milk according to the present invention containing fermented milk or a concentrate thereof, and the VPP, IPP and YP at, or above, certain concentrations.
