The present invention describes a cooking device based on continuous ohmic heating for nixtamalization, which is used for the production of masa and flour of nixtamalized maize and byproducts, also referring to the process for the obtention of said byproducts. The cooking device is part of a continuous system for producing maize masa and flour which does not generate polluting effluents, the same allowing the processing times to be short, as well as the use of crushed maize which reduces costs, where due to the characteristic of being continuous, the process is variable and may be used in industrial applications. The cooking device comprises a body which has an inner cavity through which the material to be cooked is flowed in a continuous manner, the same being made of insulating materials such as Teflon and nylamide or any other insulating plastic material which complies with the food standards. The inner rectangular cavity of the device includes metallic electrodes, in the upper and lower part, which facilitate the ohmic cooking of the material.
