Disclosed is a process of drying a particulate plant material for use in a food product, said process including the step of subjecting a particulate plant material suspended in a fluidised bed to an elevated temperature of at least 100 degrees Celsius for at least 3 minutes to develop desired flavour characteristics to the particulate plant material and to thereby dry said particulate plant material, wherein said particulate plant material is ground or milled.
