Cryoprotective protein with chitinase activity at low temperatures, process for their preparation and their applications.; The present invention describes a novel biologically active at low temperatures chitinase protein is stable in a wide pH range and highly cryoprotectant. Furthermore, the method for the production, isolation and purification of the protein and its use in the cryoprotection of sensitive proteins freeze-thawing and processes degradation or modification of materials containing chitin in conditions requiring low temperatures is included.
