An efficient production method of large amounts of recombinant SS soluble in its active form is described by expression of the gene encoding the SS in a strain of Escherichia coli. The expression vector used allows the recombinant SS produced to have a histidine tail that facilitates its purification quickly. Sequences of mutated versions of the SS gene that code for SS isoforms suitable for ADPG production are also described. Using the "wild" and "mutated" versions of recombinant SS, an efficient method of producing ADPG and UDPG is described. The use of SS for the production of sucrose determination test devices is also described. Finally, it is described the obtaining of transgenic plants that overexpress the SS gene, either constitutively, either in leaves or reserve organs, and that have a high content (both in leaves and in reserve tissues) in sucrose, ADPG , G6P and starch as a result of the high ADPG synthesizing activity of the SS.
