PURPOSE: A method for preparing polygammaglutamic acid-chitosan nanoparticles is provided to apply to food addtives or functional foods without a harmful surfactant. CONSTITUTION: A polygammaglutamic acid-chitosan nanoparticle is prepared by reacting polygamma glutamic acid and chitosan in a reaction medium. The reaction medium further contains cationic mineral ingredients. An organic acid solution is used as the reaction medium to dissolve chitosan. The organic acid solution is acetic acid solution, butyric acid solution, palmitic acid solution, sulfonic acid solution, sufinic acid solution, or mixture thereof. The chitosan is obtain by substituting N-acetyl group with amino group by deacetylation.
