PURPOSE: A producing method of neohesperidin dihydrochalcone using citrus peels is provided to obtain the neohesperidin dihydrochalcone by the supercritical extraction optimized by a reaction surface analysis method. CONSTITUTION: A producing method of neohesperidin dihydrochalcone using citrus peels comprises the following steps: supercritical extracting neohesperidin from the citrus peels for 40~60minutes using supercritical carbon dioxide as a solvent; alkali hydrogen treating the neohesperidin at the pH of 9~10, for converting the neohesperidin into the neohesperidin dihydrochalcone; and cooling the reacted mixture to induce the crystallization the neohesperidin dihydrochalcone.
